Cuia (Mate Gourd)
To avoid bitterness, a cuia has to be "broken in" before using: Fill the cuia half with mate and top it off with hot (not boiling) water. Let it sit for half a day and repeat the procedure. Now the cuia can be used.
Directions: Fill it half with mate and add hot water. After 7-10 minutes, the mate can be sipped through the metal straw. To avoid clogging, the beverage should not be stirred with the bombilla. It is customary to refill the cuia two or three times with hot water, each infusion will become weaker. A well-seasoned cuia contributes significantly to the flavor of mate.
