Tea ware : Guywans

Guywan in Mandarin, means "covered cup".  The Guywan has been used in China since the 1300's.  A guywan consists of a saucer, bowl, and lid which are designed to be used together as a unit.

The correct way to use a guywan is to fill the bottom of the bowl with tea leaves.  Pour hot water slowly along the side of the bowl.  This causes the leaves to swirl in the bowl, releasing more of the flavor of the tea.  The lid can then be placed on top for the steeping process.

To drink from the guywan, hold the saucer in the palm of your hand, using your thumb to steady the bowl. Use the other hand to tilt the lid using the knob slightly away from you in order to hold back the leaves while you sip.  Add more hot water as needed.
